Traditional Christmas Cake
This delicious traditional Christmas Cake is sure to be hit with family and friends this festive season.
Ingredients:
Mix 1
1 KG packet dried fruit
½ cup mixed peel
1 cup chopped apricots
1 cup dried figs
100g glace cherries cut in half
1 tsp mixed spice
1 tsp cinnamon
1 cup walnuts
Mix 2
250G butter
1 cup brown sugar soft
Mix 3
5 eggs
Mix 4
1 cup plain flour
1 cup SR flour
1 tsp bicarbonate soda
Icing
1/3 cup apricot jam
½ cup brandy (optional)
Decorate with 3 x 500g packs readymade icing
Method:
Step 1
Mix 2 together beat until smooth add eggs one at a time. Add dry ingredients mix 4 then add mix 1.
Step 2
Place in a lined 230mm square cake tin bake at 130oC fan forced for 3 hours until a skewer inserted comes out clean.
Step 3
Once cold sprinkle with brandy glaze with apricot jam which is used to stick the roll out icing to the cake.
